Supposing that I broke off the nRF current measurement pin connector on the nRF9160dk - what are my options i.e. are there other pins that can be made available for the purposes of measuring the board's power draw? :-)

Can you share a picture of the HW abuse?
It is possible to solder on to the pads again if they(the pads) are still there

Sorry, didn't see your reply. Here's a picture:
Looks to me like the pad on VDD_nRF(Pink) is gone and that the pad for VDD_nRF'(Red) is still in place.
You can solder on to the pad that is till left on the PCB and the i would recommend to connect to the resistor pad, or scrape of the top layer on the trace and solder on to that.
you can use a scalpel or something similar that has a narrow tip to achieve this.
