I think the issue happens due the Windows path length limitation. Check out this answer: https://devzone.nordicsemi.com/f/nordic-q-a/72187/v1-5-0-mcuboot-build-fail/297589#297589 
 Try naming the build folder 'build' instead of 'build_nrf5340dk_nrf5340_cpuapp'.
