How to make characteristic data a text data or a string, according to the tutorial ?

I have followed the above tutorials and written my own characteristics, what are the few and only parameters that needs to be changed to make the characteristic values as ascii string, like in the "Device Information service", what is the simplest way to do it ?

The data is arbitrary, so BLE will not care what data you send and how you interpret them. Though there may seem as the nRF Connect app will not do this for you based on this case:
