Where can I find the description of how the buttons on nRF52-DK work for each of the examples in nRF5_SDK_17.0.2?

Hello,

You can read about this in each examples' documentation, such as here for the Blood Pressure example.
Most of the BLE examples will utilize the default BSP BLE button assignments with possible additions and/or modifications for the specific example.
