I think any touch pad would suffice, if the communication protocol is supported by the nRF52840.

Take a look at the sample ncs/zephyr/samples/sensor/fdc2xix for example, which demonstrates how to communicate with the FDC2112, FDC2114, FDC2212 and the FDC2214 through I2C. You need to add an overlay file for your specific board, use the nrf9160dk_nrf9160.overlay file for reference.

I can not say for certain. I would recommend you to take a look at the driver zephyr/drivers/flash/nrf_qspi_nor.c, then study the datasheet for the S25FL512s and see if it's compatible.

If you build the littlefs sample with the nRF52840 DK, the on board external flash will be used.

Be aware that the onboard external flash is enabled by default in the board dts file:
