I might not be able to provide you with a clear answer here. In general, the nRF9160 should be able to calculate close to anything as long as enough memory is available :-)
One thing that should be considered though is the interface towards the camera. There are not that many pins available/accessible on the Thingy:91, so the question is if there are enough pins and if they meet the cameras requirements.
