The easiest way to set the CONFIG_MCBOOT_IMAGE_VERSION would be while building your application in west for example, by adding something like the following after your west build commands:
(west build ...) -- -DCONFIG_xxxxxx=$(date)
ok, but how to extract value from header file and use it as $(date)

There's been some trouble setting .conf/DT overlays specifically in CMakeLists.txt in the past. Can you try creating the folder "child_image" and place the files in there? I.E. my_app/child_image/mcuboot.conf and see if that works better?

set(confname var) just don't work.
But
I handled with this by:
1. Generate file image_version.conf by cmake, which has only one config:
2.and adding in CmakeList.txt
list(APPEND CONF_FILE "generated_file_name.conf")

You will have to set the config based on your own input. Since KConfig is static, you need to set it based on a script, I.E west build -- -DCONFIG_MCUBOOT_IMAGE_VERSION=$SOME_VARIABLE
