Example application showing custom driver development

Longtime mbed user, first time trying zephyr. I'm hoping to find an example application that shows the expected file structure/CMakeLists/KConfig for a project that includes some sensors that aren't already in the zephyr library. I expect this would help almost everyone who's new to Zephyr and is developing an application with custom hardware. Right now I'm simply not sure what an actual zephyr-based product file structure should look like. Any help/links much appreciated!

I should note that I've looked through the zephyr documentation. Under "Application Development" they have an example project here: https://github.com/zephyrproject-rtos/example-application/tree/main/app

however this doesn't look like the project structure that the nRF Connect for VSCode extension generates. Namely,  the top-level zephyr application includes an "app" directory which include "src" as a subdirectory, while the VSCode generated structure starts at "src". Should I emulate the example application? Why doesn't the extension? It would add some work to manually convert everything.
