matter: CONFIG_DEBUG in Zephyr leads to built errors with the current Matter version

I am using the current nrf-sdk v2.1.0, which includes the matter version v2.1.0 from the Nordic repository.

I encountered an error that setting CONFIG_DEBUG will result in an unised-variable error in the matter repository, which is (as far as I can see) already fixed in the matter repository. It would be nice if this would make it to nrf-sdk v2.1.1.

    Hi Robert,

    According to our development team, our plan is to provide Matter 1.0 version tag in NCS 2.1.1 and this commit is not part of Matter 1.0 tag, so most likely we would like to include it in NCS 2.2. 
    We can also include some important local patches in our Matter version used in NCS, but we would need to evaluate this change and decide how critical it is for our customers. I will give you some feedback later.
