Nordic installation, KCONFIG

I am trying to install using VS code, using the video

https://www.google.com/search?q=install+nordic+visual+sydio+code&oq=install+nordic+visual+sydio+code+&aqs=chrome..69i57.22467j0j7&sourceid=chrome&ie=UTF-8#kpvalbx=_-54_Y73vDcnZgQaho4bACw_25

I am using Windows 10, and the latest versions, but the video is outdated and I tried to adapt. The first stage has competed and I could start with the second video (Welcome section completed). However, if I create a new app it only creates the directory, with abs nothing in it, I do however get a screen saying Kconfig: Require Python 3.6.0, but Python 3.8 is installed as I used VS code (PlatformIO) for many years.

The above is when you choose a freestanding, new application using a template. I can't find the blinky template at all in my installation and just used any blinky app, they all have the same outcome.

If I use the workspace I end up with a directory (after 20 minutes) and could actually build an app and download it to the 52840 devkits, but it is extremely slow and when I reopened VSC it just sits and do something, with IDE totally unresponsive. I tried to delete the directory and start a fresh create application with the same outcome.

Do you have an updated install guide, or how can I fix the Kconfig issue?

Building and flashing of an application is also documented in this tutorial and you can find the same here. You can avoid the video provided along with the tutorial as it is same as what you have pointed in your query.
